Sheet Pan Nachos

Amigos, there's no need to measure anything! Add as much or little of each as you want. Use this "recipe" as a guide to create your own sheet pan nachos.

Ingredients

  • corn tortilla chips
  • black beans
  • corn kernels
  • green onion sliced
  • red pepper diced
  • chorizo sausage chopped
  • cooked chicken breast shredded or chopped
  • pickled banana peppers
  • Monterey jack and cheddar cheeses grated
  • cilantro
  • avocado
  • sour cream
  • salsa

Instructions

  1. Preheat oven to 350 degrees F.
  2. Line a large baking pan with foil.
  3. Scatter an even layer of tortilla chips on the bottom, overlapping slightly. You want to make sure each chip can get a little bit of the toppings.
  4. Add a layer of each topping you plan to use (corn, black beans, chicken, chorizo, banana peppers, jalapeno - whatever!) Top with the cheese.
  5. Add a second layer of tortilla chips and repeat with the toppings.
  6. Bake for about 10 minutes or until the cheese has all melted.
  7. Serve with cilantro, avocado, guacamole, sour cream and/or salsa.
