  • 2 cups corn kernels
  • 3 tbsp all-purpose flour
  • 3 tbsp cornmeal
  • 2 green onions thinly sliced
  • 1 cup shredded cheddar cheese
  • 1/2 tsp salt
  • pepper to taste
  • 2 eggs
  • 2 tbsp milk
  • canola oil
  • sour cream dill, minced garlic, and more green onions for serving (optional).

  1. Combine corn, flour, cornmeal, green onions, cheese, salt and pepper. Stir to combine.
  2. Add eggs and milk and stir until well combined.
  3. In a large skillet, add enough canola oil to create a light film across the entire bottom of the pan. Heat oil over medium-high heat.
  4. Once the oil is hot, drop 3-4 tbsp of batter into the pan, and gently press down to form a patty. You can make the fritters any size you wish. Fry for about 3-4 minute per side, or until golden brown. Transfer to a plate lined with paper towel. Serve warm.
